Carrot Cake

8 Tablespoons "egg"
1 1/4 Cups oil
2 Cups sugar
2 Teaspoons vanilla
1 Cup soy flour
1/2 Cup rice flour
1/2 Cup sweat rice flour
2 Teaspoons baking soda
2 Teaspoons baking powder
1/2 Teaspoon salt
2 Teaspoon cinnamon
3 Cups finely chopped carrots
1 Cup walnuts (optional)

Preheat oven to 350
Mix egg, oil, sugar, and vanilla until creamy.
Mix flour, baking powder, baking soda, salt, and cinnamon.
Stir in carrot
Pour into floured baking pan.
Bake 40-50 minutes, or until golden brown.
